Winemaker Notes: The 2023 vintage for Paso Robles Cabernet Sauvignon is proving to be a standout in terms of flavor, with plenty of tannins and complexity. The growing season was wet and cool. The cooler temperatures were punctuated by late-season rain events and a few warm weekends in September helped push everything along. Overall, the 2023 Cabernet Sauvignon shows bold, dark notes and excellent quality.
Maturation: 17 months in a combination of 65% neutral French oak, 20% new American and 15% new French oak.
Tasting Notes: Rich and layered, showcasing an inky deep, ruby hue in the glass. On the nose, ripe black cherry and plum compote take center stage, interwoven with subtle hints of graphite and dried herbs. The palate is lush and fruit-driven, with notes of fig tart adding a velvety sweetness, balanced by fine-grained tannins and a touch of pencil lead minerality that lends structure and depth. A lingering finish of dark fruit and spice completes this expressive and elegantly crafted Cabernet.
